Smart Gastronomy Lab

The SGL is a living lab on food and culinary practices. It’s uniqueness lies on its 360°C vision of food innovation with a multidisciplinary approach mixing gastronomy, science, technology and art. As a living lab it allows co-creation, prototyping and testing in real-life conditions putting the user at the center of the approach.

Current R&D topics of the SGL are emerging technologies such as 3D food printing, lactofermentation, the use of new ingredients in food such as insects and micro algae and the impact of different cooking process on the taste.
