Is fermentation safe?

There is a lot of mistrust around bacteria, we have been led to believe that bacteria are bad for us. This is not the case, fermentation has been used for centuries to preserve and enhance the nutritional content of our food.

Do I need to prepare anything in advance?

Not at all. Just bring curiosity, a willingness to enjoy and learn and the workshop will provide the rest.

Can I take home the Kim Chi and Kombucha that I make.

You certainly can. Each participant will take home their own jar of kim chi to continue working on over the following two weeks and their own jar of Kombucha with a SCOBY to use and reuse.

SCOBY is an acronym that stands for Symbiotic Culture of Bacteria and Yeasts. It's a disc shaped 'mushroom which blocks the air from the fermenting Kombucha tea.
