JULIE DAVAINE | Dream Culture (moderator)

Julie Davaine hails from the landscapes of France. With over two decades of experience in hospitality, Julie dedicated 14 years to senior leadership roles with Merivale before focusing on coaching teams and individuals with Dream Culture.

Beyond her professional achievements, Julie is deeply passionate about fostering growth and development within teams, nurturing a growth mindset, and helping individuals and groups achieve remarkable personal and professional success.

MARIANNE POIREY | Four Frogs Crêperie

Marianne Poirey is the General Manager and co-owner of Four Frogs Crêperie, one of Sydney’s most loved destinations for authentic French crêpes. With over 25 years of hospitality experience, she has worked with prestigious restaurants and chefs, including Alain Ducasse in Paris, the opening of Le Jules Verne at the Eiffel Tower, and Luke Mangan here in Sydney. Originally from Franche-Comté, Marianne has brought her passion for French gastronomy to Sydney, leading Four Frogs’ growth over the past five years while strengthening cultural ties between France and Australia.

LUCY ALLON - Straight to the source

Lucy Allon is an award-winning restaurateur and highly regarded hospitality and food industry expert with over two decades of experience. She is co-founder of "Straight To The Source", co-host of its podcast, and co-founder of Apetite for Excellence, Australia's prestigious awards program for emerging culinary talent. A passionate advocate for sustainability, provenance, and the next generation of industry leaders. Lucy has collaborated with many of Australia's most celebrated chefs through her role on the delicious Produce Awards. Blending extensive industry leadership with academic studies in Gastronomic Tourism and Sustainability and Social Impact Strategy, she is widely respected as an influential catalyst for innovation and transformative change across the evolving food, hospitality, and events landscape.
